Clad in spun ceramic fiber insulation and requiring only a 1-inch side clearance to combustibles, the monolithic 4-inch thick cast-ceramic hearth and dome rest gracefully on an open black painted steel stand, harmonizing durability with elegance.

Distinguished by its galvanized steel finish and complemented by a stainless steel service panel, this oven arrives fully assembled, ETL Listed, and proudly crafted in the USA, ready for seamless installation. - Gas-Fired Options: Choose between natural gas (NG) or liquid propane (LP) configurations.
  - Radiant Flame (RFG): Harness the power of an easily adjustable radiant flame (105,000 BTU/hr max. NG) positioned at the rear of the cooking chamber. With user control, achieve the perfect balance between radiated top heat and floor conductivity.
  - Radiant Flame + Underfloor IR (RFG-IR): Elevate your cooking experience with the addition of an 83,000 BTU/hr (NG) thermostatically controlled infrared burner mounted beneath the oven deck, ensuring optimal production capacity without compromising on heat recovery.

- Wood-Fired Options: Embrace the tradition and flavor of wood-fired cooking.
  - Wood-Fired (W): Immerse yourself in the rich, smoky aromas and flavors imparted by a wood fire.
  - Wood with Gas Assist (W-IR): Enhance your wood-fired experience with the supplemental BTUs of an Underfloor IR burner. Note: This configuration requires a wood fire.

- Combination Options (-W): Enjoy the flexibility of incorporating wood burning into gas burner configurations. Note: Adding wood to an oven with an RFG burner will reduce available hearth capacity.

VENTING INFORMATION

The Mt. Baker can be direct connected to a power ventilated, grease-rated chimney or can be vented with a Listed Type 1 exhaust hood, or one constructed in accordance with NFPA 96 and all relevant local and national codes. The oven must be vented in accordance with all relevant local and national codes, and in a manner acceptable to the authority having jurisdiction.
