The Bistro 4343 oven boasts a generously sized door opening of 24.5 inches wide by 7.5 inches high, providing easy access to its interior. With a spacious cooking area measuring 34 inches wide by 27 inches deep, it offers a substantial 6.4-square-foot cooking surface. Its robust construction includes a tensioned steel exoskeleton surrounding the hearth and dome perimeter, ensuring both structural integrity and long-lasting durability.
Wrapped in high-quality spun ceramic fiber insulation and requiring only a 1-inch side clearance to combustibles, the monolithic cast-ceramic hearth and dome rest securely on a black powder-coated steel stand, while the oven body is enclosed with stainless steel for added strength and sleekness.
Arriving fully assembled for your convenience, this oven also offers the option of partial disassembly using the optional Lifting System, facilitating passage through a 32-inch doorway—refer to the provided Installation and Operation Manual for detailed instructions. ETL Listed and proudly manufactured in the USA, this oven is ready for hassle-free installation upon delivery.
Fuel Options:
- GAS-FIRED ONLY: This configuration allows the oven to burn either natural gas (NG) or liquid propane (LP). Choose according to your preference and availability.
- RADIANT FLAME (RFG): This option utilizes an easily adjustable radiant flame with a maximum output of 80,500 BTU/hr for NG. Positioned in the rear of the cooking chamber, user control ensures precise adjustment to balance the oven's radiated top heat with the heat being conducted and radiated from the floor.
- WOOD-FIRED (W): Select this option for a traditional wood-fired cooking experience.
- COMBINATION (-W): This configuration enables optional wood burning for ovens equipped with gas burner configurations. Note that adding wood to an oven with an RFG burner will reduce available hearth capacity. Specify gas type at the time of order.

VENTING INFORMATION
The Bistro 4343 has a 10-inch O.D. flue collar and can be direct connected to a power-ventilated, grease-rated chimney or can be vented with a Listed Type 1 exhaust hood, or one constructed in accordance with NFPA 96 and all relevant local and national codes. The oven must be vented in accordance with all relevant local and national codes, and in a manner acceptable to the authority having jurisdiction.
