The Fire Deck 8645 oven boasts a generously sized door opening measuring 56 inches wide by 10 inches high, enhanced by a glass heat shield and a sleek stainless steel mantle. Its expansive cooking area spans 68 inches in width by 32 inches in depth, providing a spacious 15-square-foot cooking surface. Ensuring durability and longevity, a tensioned steel exoskeleton envelops the hearth and dome perimeter. The oven's insulation, consisting of spun ceramic fiber, encases a monolithic 4-inch thick cast-ceramic hearth and dome, resting securely atop a black painted steel stand.
Crafted with attention to detail, the front of the oven is finished with stainless steel, while galvanized steel adorns the top, back, and sides. Delivered fully assembled and ETL Listed, this oven is ready for installation upon arrival, proudly made in the USA. For added convenience during installation, a set of optional rigging casters is available.
Fuel configurations for the Fire Deck 8645 oven include:
- Gas-Fired (GAS): Configured to burn either natural gas (NG) or liquid propane (LP).
- Radiant Flame + Underfloor IR (RFG-IR): Equipped with adjustable radiant flames on both sides of the cooking chamber, complemented by a thermostatically controlled infrared burner mounted beneath the oven deck for optimal production capacity.
- Decorative Flame (-DF): Features an additional 15,000 BTU/hr flame at the rear of the cooking chamber for aesthetic appeal. Note that this option may reduce available hearth capacity.
- Wood-Fired (W): Designed for wood-fired cooking exclusively.
- Wood with Gas Assist (W-IR): Combines the authenticity of a wood-fired model with the added BTUs from an Underfloor IR burner for enhanced performance. Please note that a wood fire is necessary for this configuration.
- Combination (-W): Offers the flexibility of optional wood burning for ovens equipped with gas burner configurations. Note that adding wood to an oven with an RFG burner may reduce available hearth capacity.
VENTING INFORMATION
The Fire Deck 8645 must be vented using a Listed Type 1 exhaust hood, or a hood constructed and installed in accordance with NFPA 96 and all relevant local and national codes. The oven must be vented in accordance with all relevant local and national codes, and in a manner acceptable to the authority having jurisdiction.
